SHE Cooks: Peppered Brown Sugar Bacon

Hey Ya’ll! A few weeks ago, Andrew and I visited Gatlinburg, TN for a quick weekend trip. While there, we ate breakfast at Paula Deen’s restaurant. If you have never been there, I would definitely recommend it. After attempting to eat dinner there once before (there was a THREE HOUR wait), we planned to go early to make sure we didn’t spend half the day waiting for a table. Now that we have eaten there, the three-hour wait would have been worth it!

The meal was served family style, and once seated we were greeted with orange juice and a cinnamon roll. Your table chooses three main entrees, two side dishes, and a breakfast meat. I was hesitant about the amount of food, but the portions were based on the amount of people at the table, so it was perfect. Chicken and waffles, breakfast casserole, and bananas foster French toast were the main entrees we chose, along with hashbrown casserole, biscuits and gravy, and my most favorite menu item of all – peppered brown sugar bacon. It was beyond delicious, and I wanted to eat it again as soon as we got back home.


To recreate it, preheat the oven to 350 degrees and line a baking sheet with parchment paper.  Next, place the bacon on the baking sheet and season generously with black pepper. Then take brown sugar, about ½ tablespoon per piece of bacon, and rub in to the bacon. Once every piece is coated, bake for 20 minutes. Once finished, let the bacon cool to allow the sugar to harden. The bacon is great on its own, but better when served with biscuits and eggs. Make sure to cook some for your next breakfast or brunch!

Ingredients
4 pieces thick cut Bacon
1 teaspoon Black Pepper
2 Tablespoons Brown Sugar

Hey y'all!  Even though this week was a short week for me (thank you President's Day!), it feels like Monday was three weeks ago....  

In the middle of this super long week, I've been starting to think about planning our vacation for the year. Disclaimer: I love planning trips. I've planned and changed my mind on about 47 different trips this week! I just love seeing everything somewhere has to offer.  If you're like me, you're thinking about your trip(s) too because of the ugly B word... budget.  So with all that in mind I thought I'd share a few things that I like to keep in mind when I'm planning where we're going to go and how much we'll need. 

1. If you are going to be flying somewhere be careful when you're looking for prices. Your computer tracks where you've been and what you've been searching (cookies) and the more you search plane tickets looking for cheaper prices, the more expensive they get! If you have a couple of computers in your house then search on different ones and finally book on yours. Clearing your cookies after each search will help too.

2. Just because gas and food are one price where you live doesn't mean that is what they are where you're going. Do a little research on what gas prices typically run in the month you are going and look up local restaurant menus. This way you'll be able to budget correctly and there won't be any surprises.

3. Don't reinvent the wheel. There is this great thing called Pinterest and these great people called bloggers. I'm about 99% sure that if you type in the city you're going to you are going to find so many articles on things to do. "XYZ in One Day" "XYZ With Kids" "XYZ on a Budget" .... you get the point! Let them help you with your planning. I've found things to do on blog posts that I never found on Google!

SHE: Enjoyed the holidays

Hey Y'all,

Hope you had a great week. I had the pleasure of going for my yearly medical check up. Now know that I originally scheduled this appointment in the fall (yes, it takes a long time to get those appointments). In the fall, I didn't know how much I was going to enjoy those delicious holiday goodies. How could I?   So this girl wasn't concerned about her visit... it was months away.

So when I went for my check up this week, the evidence smacked me right between my eyes.  Clearly I have enjoyed a lot of things over the holiday season and every ounce of them showed up at my doctor's office on the scales....  "Oh, it's not that much" sweet Dr. Donna says. "It happens sometimes" she says. 

Why Yes ladies,  it has happened and it is time for it to GO. The question is how? 
I love sweet tea and Chic-fil-a (and apparently anything not nailed down).  I admit, I have never been one to really diet- too much pressure and I don't like feeling deprived.  But as I am getting older (watch out girls, it starts early), it is harder and harder to make that scale go down. I am praying that with some determination I will be successful. 

I love to walk, so my treadmill is dusted off and I am ready to begin my fitness plan.  I have my cute Fitbit as a reminder to get moving ~ I almost never leave home without it.  But have you noticed that it is so much easier to consume 10,000 calories than it is to get 10,000 steps.  (Just kidding ~ surely I  haven't consumed 10,000 calories?? )  My goal is to lose some weight of course, but also to feel better. I have less energy, a foggy brain and sleep is a joke and I have my poor eating habits/ lack of exercise to blame for most of that.

Tell me I am not alone here friends.  What was your holiday treat that hung on....? I am very guilty of  BLT's (bites, licks & tastes) while cooking and they all add up. Calories and pounds are sneaky like that. 

If you have some leftovers that need to go ~ join me and let's get healthy.  My plan is to watch what I eat, drink water and exercise/ walk daily.   I have found a yoga plan that I think will help ease me back into a routine.  It is a quick series that is supposed to energize you for the day and is a great one for beginners. 

Wish me luck! I will be sharing my progress (I hope) with you.  Maybe you are ready to work on your summer body too.  I would love to hear your suggestions for staying motivated.

SHE: Isn't Getting Sick

Hey Y'all,

How is everyone feeling?  We have so far survived the Flu/Virus/ Tummy bugs going around. Fingers crossed, knocking on wood and saying our prayers to stay that way!! I hope your family has faired as well. The majority of our local schools have been closed due to the number of students and teachers out with illnesses. The schools were"fogged" for disinfection.  There have been times I would have appreciated the option of fogging our home to get rid of the germs.  How about you?

 
You can't be too careful, those nasty germs live everywhere and some can survive up to 48 hours.  So you know there is an excellent chance you will be exposed to some sort of germ.
Take precautions to protect your family with some really good basic tips, you might not have thought about. You are already disinfecting your home routinely, but when an illness arrives you just might want to step up your game.

1) Quarantine the sick ~ this sounds harsh but it is very important to prevent sharing the "love".

2) Encourage everyone to wash their hands with warm soapy water ~ teach your littles to sing Twinkle, Twinkle, Little Star or  recite their ABC's while they wash their hands.  This teaches
them the proper amount of time they should spend washing their hands. Remind them to wash their hands when they get home, before eating, after coughing, sneezing, blowing their noses and of course after using the restroom (personal hand sanitizers might be good to have available too).

3) I use Lysol or Clorox wipes to wipe down hard surfaces, remote controls, phones & light switches.
Don't forget about refrigerator handles, cabinets, and door knobs.  I tend to go with disinfecting wipes, that way I can clean and toss, no germs hanging around.
Just wipe and allow the surfaces to air dry.

4) The refrigerator door ice/ water dispenser. Never use your cup to get a refill. I always get a fresh cup and then pour the ice or water into my cup. It's really hard to not touch the dispenser with your dirty cup.

5) Keep things off your kitchen counters/ tables especially anything that comes home from school or daycare. ( Backpacks, coats, books, and toys.... breeding ground for germs ).
I know this one is hard, just remember to thoroughly wipe and allow to air dry before
anyone has dinner or a snack there.

6) Toothbrushes, if you have been sick throw it away. Some recommend that you run your toothbrush through the dishwasher in the silverware tray, but they are typically inexpensive to replace.
If yours is a little more upscale ~ you can soak it in an antibacterial mouth wash for 30 minutes. 
* An antibacterial mouthwash works for orthodontic retainers as well.
Never, ever boil or put a retainer in the dishwasher.


If your loved one gets sick, remember to be sure they get plenty of fluids, lots of rest and of course extra love. I hope these tips will be a good reminder of the extra areas to disinfect while those under the weather recover and hopefully it doesn't spread through the whole family.

SHE Does Something Different for Valentine's

Hey y'all! Valentine's Day is next week and whether you've got a date or are participating in galentines, I'm sure you've been thinking about what to do. 

I've always loved the day whether there was a boy or not, such a girl. But on the other hand, I'm probably not the most typical girl out there. I don't want to go to dinner on the big day and deal with the crowds. I really don't want an overpriced bouquet of flowers. And I'm not the biggest fan of boxed chocolates. So today I'd thought I'd share with you a couple of ideas for something different to do! These work for dates, galentines, or whatever your plans are!

1. Brunch > Dinner 

I'm a huge brunch fan and we did this last year. Instead of going out with the crowds that night, we had brunch that morning. I loved that it was something different to do. I realized Valentine's day is on a Tuesday this year, but celebrate over the weekend or have brunch for dinner!

2. Glass > Flowers

Skip the flowers and go create a handblown glass ornament together! I like Ignis Glass Studio in downtown Chattanooga. Hubs and I did this for our anniversary and it was so cool.  You pick out the two colors you want and then get to blow it yourself. A fun date, great memories, and a wonderful keepsake that won't die in a few days!

3. Dessert > Boxed Chocolates

Instead of dishing out for the boxed chocolates, go get a real dessert together. Chattanooga has wonderful places to go. Some of my favorites are The Hot Chocolatier, Rembrandt's Coffee House, and Chatta-Cakes Bakery. These are all so good, but y'all, Chatta-Cakes has the BEST cookies!

SHE Bakes: White Chocolate Caramel Cookies

Hey Ya’ll! Over Christmas I discovered my new favorite cookie recipe – white chocolate chip with caramel cookies. The caramel balances out the white chocolate so they aren’t too sweet; plus, it makes the cookies slightly chewy. I could probably eat the entire batch by myself!

To start, preheat your oven to 350 degrees. Then mix ¾ cup of softened butter with ½ granulated sugar and ¾ cup brown sugar with a hand or stand mixer. Once the mixture is creamy, add one egg and 2 teaspoons of vanilla extract and set aside.

Now, in a separate bowl, combine your dry ingredients. First take 2 cups all-purpose flour, and then add 1 teaspoon of baking soda, ½ teaspoon of salt, and 2 teaspoons of cornstarch. Stir well and add to the wet ingredients. Be careful to add the flour slowly to not have it fly all over your kitchen! Once your batter is formed, fold in 1 cup white chocolate chips and 1 cup of caramel bits.

To form cookies, take a spoonful of dough and roll into a ball (gumball size) and place on a cookie sheet lined with parchment paper. The dough should yield 36-42 cookies. Once all of the cookies have been formed, place in a freezer for 10 minutes to allow them to set.

After 10 minutes, remove the dough from the freezer and bake for 8-10 minutes. If you decide you only need 12 cookies instead of 36, place the remaining cookie dough in a freezer bag and bake at a later date!

¾ cup unsalted butter, softened
¾ cup brown sugar
½ cup granulated sugar
1 egg
2 tsp. vanilla extract
2 cups all-purpose flour
2 tsp. cornstarch
1 tsp. baking soda

1 cup caramel bits

Long Time No See

Hello Fellow SHE's,

I hope this post finds you all well.  So far 2017 has been crazy at our house.  I mean we are always crazy, but we have moved on to a new level of craziness!!  I started cleaning out closets, purging and redecorating after taking down Christmas decorations.  I mean don't you hate how empty and lonely your house  looks after the holidays?  I even got my hubby on board to paint the living room and dining room.  One major problem is the ceilings are 18 feet tall.  He rented us a scissor lift. Yes, you heard that correctly.  We rented a scissor lift, brought it into the house (lucky for us we have a slab foundation) and painted the rooms ourselves. Did I mention we also were keeping my niece for  10 days?  She will be 2 this month.  We had a scissor lift, paint paraphernalia and a toddler.  That is a recipe for disaster if I ever heard one!  Now that was enough for any one person, but my 90 year old grandmother fell and broke her hip.    She lives across the state in Memphis.  Now we get to add a trip to see her.  She did great through surgery.  The swelling in her legs that made her fall was her kidneys and liver starting to shut down.  She passed away January 15th. 

Granny was a great lady who lived the majority of her 90 years without being sick.  She dressed herself and had just started forgetting things or saying the same thing over again.  She really did have a blessed life and I am so glad she was my grandmother!  She was more than ready to go to Heaven.  I know she is happy to be there!

Granny was from Chattanooga, which means she was buried here next to her husband.  So, now we have paint paraphernalia, house with no pictures hung, stuff every where from toddler visit and me totally exhausted.  Now all my extended family will be coming to my house because I am the one who lives in town!  Gasp!

And here is where I want to praise the real SHE's!  The totally awesome SHE's that make the world go round.  They step up everyday of the week and twice on Sunday!! 

One of the SHE's had picked up my son and was dropping him off.  I was not home yet.  She knew family was coming and I was tired.  When I walked in she had my son and her son vacuuming. 
They had done the dishes and she was cleaning the hall bath!  (I wanted to cry !  From embarrassment, from exhaustion but mostly from thanksgiving!!  I can't begin to tell you what it means for someone to DO...and not have to be asked or told. 
Amy and Brittney fellow SHE's made desserts for me to have at my house. Amy asked what else she could do to help.    She had asked me if I needed anything and I said no...But, I was taking the  obituary over to the funeral home.  I was getting new flowers for the graves of the family.  I was running all these errands. Guess what? She brought over pizza.  I was so thankful!!  I was still tired when I finally got home and the kids were fed!!  Amy rocks!!  Another SHE, knew I was going to give the eulogy at Granny's funeral and she came by the funeral home on her way to help with the dinner and put tissues, candy, cough drops and a favorite bottled drink in my purse.
I am so blessed.  The ladies I homeschool with are amazing.  They fixed our dinner for the family, served it and cleaned up.  Amy and Brittney were there to help too.  I am so honored to have these ladies to do life with.  They are all amazing and I truly love them.

Each and every one of these SHE's made me feel loved.    They make me want to be a better SHE! 
I hope you can use some of the things they did to help a SHE in your life.  Unfortunately, we will have to do funerals.  We will lose people we love.  When asked, what can I do for you?  Most of us will say, nothing.  I am giving you permission to just do it!  Show up with a pizza.  Take a care package of tissue, candy/mints, bottle of water to the funeral home.  Drop off desserts and or fruit at their house.  Especially if you know they will be having people at their house.  Ask the questions like...do you need any clothes ironed? I love to iron. (its ok to lie, if you are helping a friend)  Do you need any clothes washed.  Has your son got anything to wear? (Amy asked this question.  She knew my son had grown 4 inches  and nothing fit.  I am so glad she asked! You don't always think of those things.)  And of course, just show up and start cleaning.  It is to me, easier to DO than to accept help.  But, I have had to learn to accept help.  We all need it sometimes and I am so thankful for everything.    SHE's really do make the world go 'round and make it a better place!
