Happy Memorial Day!! For us, Memorial Day is the official the kickoff to summer.  School is out for the kiddos. The long weekend will be filled with plenty of BBQ’s, picnics, parades, swimming and family time.  Which by the way I love! I bet you do too. 



But do you know what the celebrating is all about?  According to Wikipedia:

Memorial Day is a federal holiday in the United States for remembering
the people who died while serving in the country's armed forces. The holiday, which is observed every year on the last Monday of May, originated as Decoration Day after the American Civil War in 186

SHE Planted A Garden (at an apartment)

Morning y'all! So this past weekend Hubs and I decided we had enough with our boring back porch. So we decided to decorate it and plant a garden (and after seeing Brittney's garden we wanted one too!!). We both are wanting to spend a lot of time out here this summer so we knew it was time to get to work. One big problem here... we live in an apartment. So it's not like we can start digging holes. So today I'm sharing how we still made a garden and some before and after pictures of our porch! (it's probably going to be picture overload today - sorry!)

First, the before picture:

Okay, so let's talk about this garden. We had an old pot and tote and then Nick's dad gave us another pot and tote.We love hand-me downs!


With the totes you will need to drill holes in the bottom so the water can drain.




Now that you've got the holes you're ready to paint the totes. I mean this step isn't completely necessary, but I didn't want blue and green totes on my back porch! 

So I grabbed a bottle of spray paint. Get any color you want, just check for two things. 1. That it bonds to plastic and 2. that it is for outdoors!

This is what I used! This bottle covered both totes but just barely got the second one done.
Hubs was really into taking pictures for this post and was snapping them every time I turned around!

While those were drying I started planting my succulents (completely for decoration!)





At this point, Mack was bored and found himself a spot in the shade and in a hole he dug the other day (oops)!


Okay, now they were dry. Time to plant the garden! You'll notice that I sprayed about 1/3 of the way down into the inside so that you wouldn't ever see the blue or green!

You're going to want to fill the bottom of your tote with something. The holes will let the water seep out, but also the soil.  We used some bottle caps (my in-laws have been collecting them for years so this was our free option!!), you can also use small rocks.



Next, a layer of sand. This will hold the moisture in the tote since you aren't planting in the ground!



Now fill those bad boys to the top with soil! (We used eight bags between all our pots)


Then you can start planting as normal!


This tote is okra and tomatoes!


This one is squash and zucchini!


The big pot is cucumbers and the small one is sunflowers!



I've very impatiently waiting on them to start growing!!

SHE: Never knew that....

Hey Y’all, 




The idea behind SHE Degree is to share tips and tricks we have learned along the way to make life better and hopefully allow you to learn from our mistakes.   Today I have a few tips to share that should do just that. 

1)    When using store bought frosting, mix it with your electric mixer for about 2 minutes first. It will nearly double in size. Then you can frost more cake/cupcakes with the same amount of frosting but it will reduce the calories and sugar in each serving. And every calorie counts.


2)   If you have leftover bread to reheat, place it in the microwave with a cup of water Heat a few seconds. The increased moisture will keep the food moist and help it reheat faster. I have also wrapped a muffin or pizza slice in a wet paper towel for the same effect. It reduces that “chewy” texture you sometimes have when reheating.


3)   You know when glass is broken, you can never seem to get all those little shards picked up. This is a great idea!  You can wipe the area with a dry cotton ball. The fibers will pick up little broken pieces of glass that you can’t see!


4)   Have you ever tried to get syrup or peanut butter out of your plastic measuring cups? It is pretty sticky.  Next time, pour hot water into your measuring cup then pour it out, but don’t dry it.  Next scoop it full of your sticky food.  You won’t believe how easily it comes out.


5)   This has to be my most favorite random discovery of the month.  Lisa shared this with me and my life may be changed!  I have a very distinct love / hate relationship with plastic wrap. It has a great purpose I know… but who can maneuver the box and unroll it without saran wrapping themselves??  Not me! Until now that is.  You will notice my picture is of aluminum foil… remember I haven’t been able to use plastic cling wrap.  The ends of the box have perforated cut outs that you push in.  This holds the tube in plastic and allows the wrap or foil to unroll without falling out of the box.  Genius!

SHE Cooks: Baked Ranch Chicken

Hey Ya'll! I hope you are having a great week! Today I wanted to share a super quick dinner recipe that will be sure to please everyone in your family - baked chicken tenders seasoned with ranch. Yum!

To start, preheat your oven to 350 degrees and grease a baking sheet with cooking spray. Next, dump cereal in a plastic bag, and beat with a rolling pin until it appears like "breadcrumbs". Then pour the cereal into a mixing bowl and add your ranch seasoning packet. Next melt the butter.



You can use chicken breasts, tenders, or even boneless, skinless chicken thighs (I've tried each way, and they were all delicious). Rinse the chicken, and dunk into the melted butter, then into the cereal mixture. Once all of the chicken has been coated, place on a baking sheet and bake for 20 minutes. It's that easy!



As a tip, we are not big cereal eaters in our house. So if we only need one cup of cereal, for a recipe, I buy the individually prepared Special K cereal cups instead of an entire box of corn flakes. Every time I make this recipe there is always more than enough, and I do not have to worry about using an entire box of cereal afterwards.

Recipe
1 pound chicken
1 cup of corn flake cereal
1 Ranch seasoning packet
1-2 Tablespoons of Butter

SHE: Makes Lemonade

Hey Y'all,

Hope everyone got to enjoy the gorgeous weekend.  What is up with these cool temps though?  A little caught off guard when I headed into church yesterday. But it is May and I know the hot summer days will quickly be upon us so I will enjoy the dip.  

Last summer, the men in our families were all working so hard to finish building Brittney and Andrew’s home before the wedding. (And it was oh so hot most days.) Every member of our families helped in one way or another. Since my carpentry skills are extremely limited, I tried to make sure my hospitality skills were much better. I knew I needed some cool and tasty options to keep them hydrated.  We kept the coolers stocked with water and Gatorade and of course all sorts of soft drinks.  
I don’t know about your family, but mine loves lemonade on a hot day.  We started bringing homemade lemonade to the guys and it really was appreciated. They enjoyed the cool tart flavor and I appreciated how easy and inexpensive it was to make.   There are lots of lemonade recipes but I never have much luck dissolving sugar in cold water. Do you?  So I kept looking… 
The Pioneer Woman has the best one I have found.  She makes a simple syrup and then adds the lemon juice.  Doesn't simple syrup sound   so fancy?  It is really sugar dissolved in warm water and refrigerated until cool.   Now you can whip up some simple syrup anytime you need to ~ You aren't afraid of fancy.  Homemade lemonade will look as good as it tastes in a lovely dispenser.  I didn't have that option at the "land" but my trusty cooler  worked well and was durable.

This recipe is so tasty and refreshing~ perfect for a hot summer day. I can't wait to make up a pitcher soon.  You can cut the recipe in half if you think it is too much, but then you will just have to make more.  I promise everyone will love it.   What is your favorite summertime drink?  Would love to have you share your recipe too!

SHE: Knows Her Fresh Fruits & Veggies

Hope all of you enjoyed the week-end! Lots of activities seemed to be going on...which meant lots of fun family time.  Family time for us always turns into fun family dinner.  The dinners become even tastier with all the fruits and veggies in season.  But how do you know how to select fresh tasty fruits and veggies? I never really know which ones to sniff, squeeze or thump, do you? To save you the potential embarrassment of thumping and squeezing haphazardly at your local farmer’s market, I have got a few tips to let you know what you are looking for when selecting the best tasting produce.


Broccoli: the crown should be firm, deep green with closed florets
Corn: look for ears of corn with bright green husks, plump kernels, and tassels that are brown
Cucumbers: dark green, no wrinkles, small and try to find non waxy ones
Grapes:  plump globes that are firmly attached to the stem with a light fragrance
Onions: smooth papery dry skin
Oranges: Heavy, smooth skin
Pineapple: green leafy crown, firm green body, it does become sweeter over time  but the fruit doesn’t ripen anymore once picked
Squash/ Zucchini:  Pick ones that are smaller/ thin and bright yellow/ green and are less than 8 inches long (larger squash is generally tough)
Strawberries: Color is the best indicator, redder the better, size and shape aren’t too important, white around the stem indicates early picking. Strawberries, like pineapples , do not continue to ripen once picked; but unlike pineapples, their sweetness does not increase.
Tomatoes: overall red color, plump, firm and smooth texture  There is nothing better than a fresh picked summer tomato ~
Watermelon: light colored underside, heavy, overall evenly shaped. This explains the thumping test.  Mike can pick a delicious watermelon every time, I do not usually do as well. Pretty lucky to have him in my life.

Another way to ensure your selections are tasty is whenever possibly, shop local. You know purchasing local also supports your community and independent businesses.  The road less traveled with your produce is the best.  I know there are many more fruits and veggies, but these are most of my favorites J.  What do you think?  Prepared to hit the local Farmer’s Market this weekend?
