Hey Y'all,

Looking for something fun to do that is a little more exciting than going to a movie or the pool? If so, I highly suggest you give the Sweet and Savory Classroom a call.  Owners, Jeff & Heather Pennypacker will not disappoint.

Their classroom is located downtown near Warehouse Row. It is such a neat place ~ all shiny stainless steel with every kitchen gadget you could imagine. With pretty blue and yellow walls and high ceilings.   They offer a wide variety of cooking classes for adults and children.  Ages for children's classes are 8-13 and 12-17, depending on the class or camp you choose. These are very popular and the schedule books quickly, so sign up early if you see one you like.  They offer couples' classes, team building, private parties and children's birthday parties too.  Fun, fun, fun!!

We stopped by to invite them to our event. It was Spring Break week and Chef Jeff  and his assistants were very busy with a kitchen full of young children learning about cooking.  Each student had on their apron and seemed to be thoroughly enjoying themselves.  They were so kind and welcomed us to come back and see for ourselves how fun the classes are.

The concept of SHE Degree was quickly explained & they loved it! See, everyone knows how much these skills are needed. But sadly for us, scheduling conflicts prevented them from joining us. (Saturdays are their busiest days, so joining us would be a little difficult for them.) 

However, they still wanted to be a part of the event.  Lucky for you too!  Chef Jeff & Chef Heather generously donated 3 cooking classes to the event!!  The winners were chosen from those who signed up at the market last week.  Can't wait to hear how much fun they had! Lisa and I fell in love with the classroom and we only got to visit a short time. So we will be planning a SHE outing to check it out for ourselves.  Have you ever taken a cooking class? How did it go? We would love to hear from you about your experience.

Staying Cool on Sunny Days



Hey y'all!

I don't know where you are, but here in Tennessee the temperatures are scorching! Today I'm going to share with you a helpful hint on keeping cool. This is especially important if you spend a large part of the day outside, like at a baseball tournament or a day in an amusement park. 

Wet rags for your neck.

Okay I know you're probably like, well duh Courtney, what's so helpful about that? The trick is a "secret ingredient" to put in the ice water that you dip the rags in.

Pour your water and ice into a cooler or whatever you're transporting it in. Then add a few drops of rubbing alcohol into it. The rubbing alcohol helps keep the water feeling cold, and also helps the rags stay a little dryer. So you're staying cool without soaking yourself! 

Great rags to use are bandanas or handkerchiefs.

SHE WENT TO THE MARKET

How was your weekend?  The 1st "Everything SHE Needs" market is in the books!! 

Woo Hoo!!  After all the hours we spent working on the event,  planning, organizing, inviting and PRAYING ~the day finally came.  (I am sure those of you that follow us are thankful it is over! thanks for sticking with us!)  For us the market was a way to get our name out into the community. We wanted to be able to tell people (and I mean any and everyone who will listen to us) about our ideas and plans for SHE Degree.

As we began, every aspect of the event fell into place just like it was meant to be.  Word spread all around about the event ~ Social media is amazing! We had ads on Nooga.com , a regional on line news site and even made our TV debut.  I will be keeping my day job! Lisa, however was a natural.  Vendors were calling up to the day before the event.  Of course we were more than happy to add them to the venue layout. Courtney was great at rearranging and accommodating the floor plan each time we sent out a new group text asking "Can we please add one more?" 

Secretly, we could not believe how excited and willing people were to join us on the adventure.  A market is in reality a no brainer ~ ladies like to SHOP.  And we wanted different / unique businesses and businesses owned by women if possible. More than anything we wanted the day to be a success for our vendors and have enough attendees to allow us to make a generous donation to St Jude's Children's Research hospital in memory of Cody Heard.  Now the scary unknown ... would anyone come to the event?  What if NO ONE showed up?? Yikes! We would have all these vendors there, who invested their time, efforts and money into this market. They each stepped out in a leap of faith, trusting that the ladies of SHE Degree knew what they were doing.  And we couldn't let them down. That is a lot of pressure and took lots of prayers. 

The market allowed ladies to sell their product, book home parties and build their teams. And us a chance to tell people about SHE Degree.  Everyone loved the idea and were so excited and supportive of our venture.   There was a lot of work that went into the day but boy was it was it worth it.  We met so many sweet people.  Lots of moms and daughters, girlfriends , co-workers and church friends all hanging out and having a fun girl's day!

SHE Cooks: Lisa's Famous Chocolate Chip Cookies

Chocolate chip cookies are as American as Apple Pie!  Everyone needs a great recipe and yes there is a recipe on the package of chocolate chips.  However, after several attempts of what you would  now call Pinterest Fails. A sweet lady in Crossville, Tennessee shared this recipe with me!  These cookies never fail. They are so good.  But why settle for good when you can have great?  So, I added another bag of chocolate chips and a cup of pecans (because I like them!)  Everyone wants the recipe.  The problem with these cookies is your family will never eat store bought/package cookies again.  Well, they will but all the while saying, can't you make your cookies?  So, if you are really ready to make the best cookies ever! Then make these.  

Lisa's Famous Chocolate Chip Cookies
2 1/4 cups all purpose flour
1 tsp baking soda
1 cup butter
1/4 cup sugar
3/4 cup brown sugar
1 tsp vanilla
1 small package of vanilla instant pudding mix
2 eggs
2 (12 oz.) bags of chocolate chips
1/2 bag of toffee bits
1 cup of pecans

In Mixer, mix butter and sugars until creamy, then add eggs, vanilla, vanilla pudding and baking soda.  Slowly add in flour.  Add toffee bits.  Add chocolate chips and pecans.
Bake at 350 degrees for 8-10 minutes.

You can make them with only one bag of chocolate chips.  You can leave out the pecans.  But you really need to double the recipe because they are really that good!!
I use my Kitchenade mixer to make these because the dough is so stiff.  Honestly, you can make these with a wooden spoon and a bowl and get a great arm work out.  I love to use parchment paper on my cookie sheets.  It is not a necessity, but I am hooked!    Talk about rich!  Goes perfect with a tall glass of ice cold milk!!!  I hope you make them today and enjoy!!  There is rain in the forecast here, so I think I will make a batch and find a movie or craft to do with the kiddos!

SHE: Knows Boat Safety

Hey Ya’ll! I’m not sure about the weather in your area, but here, it is HOT. One of my favorite ways to cool off is by being near the water – lake, ocean, kiddie pool – I’m not picky. Usually when summer rolls around, Andrew and I typically head to the lake. Going for a quick boat ride or simply floating near a dock can instantly cool you down and relax you. If your plan is to have some fun on the water this summer, there are a few things you should keep in mind.

1. Weather – check the weather in your area or the area you plan on traveling to ensure you will not hit any hazards. There is nothing worse than traveling to the perfect spot to have a storm roll in behind you!

2. Plan Ahead – make sure to tell someone where you plan on going and for how long. In the event of an emergency or if you run in to a problem, someone will be informed of your whereabouts, and can hopefully help in a crisis.

3. Sail Legally – always keep your boating information current and with you at all times on the water. That can include, but is not limited to, your boat registration and your boating license (in TN it’s required if you were born after January 1, 1989).

4. Safety First – before heading out, it is crucial to have enough life jackets or life preservers for yourself and the passengers. Life jackets vary in sizing, so it is important to have appropriate sized life jackets for men, women, and children. Failing to have life jackets, or not enforcing their use can cost you a hefty fine – you can never be too cautious!

5. Proper Equipment – it’s always nice to have backup items with you in case of a problem. Keep extra gas, oil, a paddle, fire extinguisher, flashlights, and anchors when traveling in case of a malfunction. You never expect to use them, but in a pinch, you will be thankful you have them!

Now that you’ve gotten a brief run-down on boating safety, grab your sunscreen, towel, and a snack, and hit the water! Always remember to be safe and use common sense. For more information, this website provides the do’s and don’ts of boating safety.

SHE: Tips For A Healthy Summer Glow

I am a girl who needs to see the sunshine. It just feels so nice ~ to relax and soak in that warmth.  And I admit, a tint of color on this pasty pale winter skin would be a bonus.  But we all know that color comes at a price ~ skin damage.  So before heading out, we lather on the SPF.  Oh yes, I spent many summer days lying out in the sun covered in baby oil, low SPF sunscreen, and even spent countless hours in tanning salons... Eek! I know, I know!! So irresponsible, but now we know better.  And lucky for us, we have some awesome options that give us the healthy glow without the risk of damaging our skin. There are many self tanners to choose from as well as spray tans.  With a little preparation you can have a smooth even tan that will look like you just returned from a nice tropical vacation without the risk of skin damage.

Whether you are applying a self tanner or heading out for a spray tan, be sure skin is thoroughly exfoliated.  Brittney shared a great scrub that makes your skin feel like satin.  Here are few other tips that might make your glow more natural looking and last longer.

Self Tanning lotion: After exfoliating, use a light moisturing lotion on knees, ankles and elbows. Apply tanning lotion in circular motions, working your way up; allow lotion to dry 10 minutes. Once the lotion is dry apply a light layer of body powder all over, this will keep lotion from rubbing off on to fabric.  Some lotions "tan" instantly while others will take 2-4 days to "build your tan".  Plan to reapply as needed to keep glow.

Spray Tan: No moisturing is advised. Once at the salon, liberally apply the provided barrier cream to feet, knees, elbows and fingers, especially the cuticles. Follow directions as instructed.  Once finished, avoid water of all types (rain/ swimming/ sweating and showering) for 6-8 hours.  Your "tan" should last about a week.

Self tanners are so easy to use and if applied well, provide a very natural looking tan. Last summer I finally bite the bullet and tried a spray tan. I was so nervous, you know it didn't end well for poor Ross in "Friends". I was certain I would be an oompa loompa!  The young girl at SunTan City was so helpful, she explained everything to me and helped me pick a shade that would be realistic for my skin tone. I am hooked!  It was fast and a great shade.  Can't wait to get my next one!

SHE Cooks: Easiest Apple Strudel!

Hey y'all! I'm not sure if you know this or not, but tomorrow is apple strudel day! I'm a huge fan of just about any apple dessert and strudel is no different! So today I'm sharing a recipe that not only has a few ingredients but is literally the easiest dessert you'll ever make! 

To make the strudel itself you'll need one package of crescent rolls, one can of apple pie filling, and some brown sugar.


Lay the crescent rolls out and pinch all the seams together. Flatten it out some either with your hands or a rolling pin. Cut strips on each side about an inch wide leaving about two inches in the middle for the filling. I failed to take a picture of this part, but you get the idea in the picture below. Spoon the pie filling into the middle and start folding over the pieces as seen below.


It doesn't have to be pretty!


Sprinkle a little bit of brown sugar on top.


Bake at 375 for about 15-17 minutes, until golden brown.

Optional step:

I chose to add a glaze on the top of mine when it was done. Simply mix together 1 cup of powdered sugar, 1 teaspoon vanilla, and two tablespoons of melted butter.


When its mixed it together it will be thick and clumpy. Start adding water a little at a time until you reach the consistency you're looking for.


Then just drizzle on top! Doesn't that look good?


Slice it up and enjoy!

SHE: Survived Year One

 Hey Ya’ll! On June 6th, Andrew and I celebrated our first married anniversary. The past year seemed to fly by so quickly. It brought so much happiness, some frustrations, lots of learning moments, and fun adventures. Everyone says the first year of marriage is the hardest; if that’s the case, I’m convinced we’re going to be just fine for 100 more. 



Since our wedding, we improved upon our cooking and laundry skills, learned how to “adult” (i.e. pay bills, process taxes, and purchase vegetables), successfully kept 3 (now 5!) fur babies alive, and learned to practice patience, over, and over again.


Everyday brings its own set of stresses, so I am extra grateful to be able to go through life with someone like Andrew. His personality is compassionate, calm, tactful, and he mellows me out perfectly. He also makes me laugh. If you’re looking for the key to having the most fun in life – be with someone who keeps you laughing. It can take your mind off every single worry or problem consuming you.


No matter what season of life you are in, always remember what love is. We can never be reminded enough!
Love is patient, love is kind. It does not envy, it does not boast, it is not proud. It does not dishonor others, it is not self-seeking, it is not easily angered, it keeps no record of wrongs. Love does not delight in evil but rejoices with the truth. It always protects, always trusts, always hopes, always perseveres. Love never fails. Thankfully throughout this year, I was also able to spend it with my fellow SHE’s. I am extra thankful for their support and guidance throughout this year. Whether it be a recipe, cleaning tip, or just words of wisdom, I learned so much from each of them, and I hope you continue to, as well.

Summer Supper

"Mom, What's for dinner?"  Does this question give you anxiety?  I don't know about your crew, but we like dinner around here. And some days I can answer that easily ~ then there are the days I have absolutely no clue.

Regardless of "what" we are having, I always try to make summer suppers cool. My go to might be any type salad~ tossed, chef, tuna, chicken or pasta.... Love them all.  Or something grilled. We also use our grill as much as possible to keep the house cooler and grilling gets dinner on the table pretty quick.

This week I have been perusing Pinterest for some new dinner options.
