BBQ Meatballs

What's for dinner? I admit I have never been great at meal planning. So for me this question could evoke a panic attack with my mind racing with questions....  Why didn't I think of something this morning? I really can't feed my family another drive thru dinner, Can I?  No Amy, you really can't.
Please tell me this happens to you.

We want you to be the best She you can be.  So the next time you don't have an answer to "What's for dinner, Honey?"   You might want to give this recipe a try. It has become a go to menu item for me because 1. It's good  2. It's easy and 3. It's fast.

This is the basic recipe, but I will let you in on a secret.  My sweet family tends to like things a little on the "plain side" ~ don't judge.  If you have a more adventurous crew,  feel free to make these your own by adding anything your family likes into the mix- onions, green bell peppers, shredded cheese.


1 lb ground beef
1/4 c BBQ sauce- your favorite or Ketchup
1/2 pkg  Brown Gravy mix ( can substitute an Au Jus mix or meatloaf mix)
20 buttery crackers (Ritz/ Townhouse- what ever you have on hand)  crushed
1 egg


Mix everything together with a spoon.  Meat should have a thick consistency.  Scoop the meat into 1 1/2 inch balls.  Place in greased baking dish- one with sides so it doesn't bubble over into your oven.  Place on the middle rack of a preheated 350 degree oven and bake for 25 minutes or until browned.



If your family likes a topping, spoon 1 T of ketchup or BBQ sauce on top of the meatballs during the last 5 minutes of cooking.  You don't want to "cook" the sauce, just warm it long enough to set it. (Notice, no topping on these).


Carefully remove the dish from your oven and they are ready to serve. How do they look?
They will go great with a veggie and some mashed potatoes. But really isn't everything good with some yummy mashed potatoes ?

You can also make them into smaller sized meatballs and use them for a cocktail party or appetizers for game night.  They will cook in less time the smaller they are.  You can use some cute toothpicks and have different BBQ sauces or dipping sauces.
