Hey Y'all and Happy Fall! With the chilly, windy rain we've had the past few days, I thought it was the perfect night to make Chicken Pie - creamy chicken and biscuits. It's so warm and delicious and the epitome of southern, comfort food. This simple recipe is one of our fall and winter go-to meals, and I hope it will become one of yours too!
This is one of Andrew's favorite meals, and it can be made in under an hour - so it's a win-win! All you'll need are the following ingredients:
To start, preheat your oven to 425 degrees. You'll also want to boil your chicken. If you don't have time for that, buy a rotisserie chicken and cut this step out completely!
While the chicken is cooking, combine the chicken stock, cream of chicken, and a dash of garlic powder and onion flakes in a small pot and bring to a boil, then set aside.
Next, in a mixing bowl, combine flour and a dash of each - onion flakes, garlic powder, and pepper.
Melt a stick of butter and add to the flour mixture.
Now, add one cup of buttermilk. If you don't have buttermilk on hand, simply add a drop or two of vinegar to regular milk and let sit for 5 minutes before adding to your flour mixture. The mixture should be thicker than pancake mix, but not quite as thick as gravy! Set aside for 5 minutes to let the batter rise.
Once the chicken is finished cooking and cooled, shred and place in a 2 quart baking dish.
Pour the soup mixture over the chicken.
Top the chicken mixture with the biscuit mixture. Be careful not to stir the batter into the chicken, but pour the batter and spread across the top evenly.
Place the dish on a baking sheet in case of any overflow and bake for 30 minutes or until golden brown.
After the longest 30 minutes of your life, the chicken pie will be ready! Be careful and let it cool for a few minutes before cutting, since the chicken mixture will be boiling hot. It will also allow everything to set and not be as runny when cutting.
All that's left is to grab some spoons and devour!

2-3 cups chicken
1 10.75 ounce can of cream of chicken
1 14.5 ounce can of chicken stock
1 cup flour
1 stick butter
1 cup buttermilk
Dash of onion flakes, garlic powder, and pepper
